It’s October and that means it’s pumpkin time!
Besides being a staple in the fall season, these colorful orange vegetables are a superfood that are rich in beta carotene. This powerful antioxidant is turned into vitamin A by your body. Vitamin A is necessary for many things, like seeing, fighting off germs, and help keep your heart, lungs, kidneys, and other organs to stay healthy. The health benefits of pumpkins don’t stop at beta carotene. Pumpkins are also a good source of vitamin C, vitamin E, iron, and folate – all of help keep your immune system functioning properly. Consuming more pumpkin can help your immune cells work better to protect you from infection and promote wound healing. Additionally, the antioxidant and anti-inflammatory properties of beta carotene in pumpkin help to protect your skin from the effects of aging and keep it calm and healthy. The best way to take advantage of the incredible vitamins and nutrients in pumpkin is by enjoying a delicious pumpkin puree.
