Stay at Home Recipes featuring Coffee

As we are staying at home, we are spending more time in the kitchen. Over the years, we have tried a lot of recipes using our coffee and tea. The first recipe blog we wrote was back in 2011. It has been fun to go back and look at those recipes. Some were successes and, well, some were not! We want to share our favorites with you and look forward to hearing which ones you have tried and enjoyed.

This post will focus on coffee recipes and includes sweet and savory recipes. A few are recipes we use in the cafes, so here is your chance to bring a little A&E Coffee & Tea cafe experience into your home.

Coffee Banana Bread

This is Emeran’s favorite recipe. For some mysterious reason, the coffee-soaked bananas add a richness to this banana bread recipe. Plus, the almond and orange are subtle but push this recipe over the edge into absolute yumminess.

INGREDIENTS

  • 3 Sticks softened butter
  • 1 3/4 cups brown sugar
  • 4 eggs
  • 1/4 cups lemon juice
  • 2 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tsp orange rind
  • 4 cups flour
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 Tbs baking powder
  • 1/2 tsp nutmeg
  • 2 tsp cinnamon
  • 2 cup pureed ripe banana steeped in cup strong black coffee (that’s about 4 bananas and we recommend Brazil)
  • Optional Additions:
  • 3/4 cup chopped pecans or walnuts
  • 1 cup of mini chocolate chips

DIRECTIONS

    1. Preheat oven to 350.
    2. Grease 2 standard-sized loaf pans
    3. Cream the butter and sugar in your stand mixer or in a large bowl.
    4. Add eggs, one at a time, beating well after each.
    5. When mixture is fluffy, add the lemon juice, orange rind and the extracts.
    6. Sift together the dry ingredients.
    7. Add to the butter mixture alternately with the banana puree, in thirds, mixing just enough to combine… do NOT overmix.
    8. Fold in optional ingredients if this is your thing.
    9. Spread the batter evenly between the pans, bake for 40 to 50 minutes until a probe into the center comes out clean.
    10. Allow to cool before devouring: ten minutes in the pan, and another hour or so on a rack.

BBQ Sauce with Coffee

We offered a cooking class with Liz Barbour years ago in tandem with Santos Dumont cafe in Milford. Liz is a personal chef and instructor out of Hollis. She made an entire meal using coffee as the unifying ingredient. Below is her BBQ sauce recipe.

INGREDIENTS

  • ½ of a small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup ketchup
  • 2 Tbs unsalted butter
  • 2 Tbs dijon mustard
  • 2 Tbs soy
  • Juice of ½ a lemon
  • 2 Tbs brown sugar
  • 2 drops Tabasco
  • 2 Tbs brewed Sumatra coffee
  • Salt & pepper to taste

DIRECTIONS

  1. Saute onions and garlic over low heat until onions are soft, approx. 5 minutes.
  2. Combine remaining ingredients with onions and simmer for 15 minutes.
  3. Add brewed coffee.
  4. Remove from heat and cool.

Mexican Coffee Rub for Chicken or Beef

Over the years, we have sold Coffee Rub spice mixes in the cafe. They come and go as we have time, so lately we have been busy moving into a new wholesale roasting facility and focusing on sales. So, if you want to make the rub at home, the recipe is below.

INGREDIENTS

  • 1 Tbs ground coffee
  • 1 tsp cumin
  • 1 tsp sugar
  • 1 tsp coco powder
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ¼ tsp chili powder

DIRECTIONS

  1. Rub spice mix on meat. Let sit for 10-30 minutes
  2. Sear rub-side down for 5 minutes.
  3. Finish as you like.
