What happens when you get 12 maverick coffee growers in a room? They throw caution to the wind and experiment with unique processing methods. The result is a super complex coffee with layers of flavor. Chiroso tree stock has its origins in Ethiopia, lending the coffee floral qualities. But the real magic is in the processing. All 12 growers followed the same meticulous double fermentation process. Step 1: The coffee cherries are fermented for 36-48 hours. Step 2: The skin and fruit is removed and the beans are fermented in dry, open air tanks for another 30-50 hours. Finally, the beans are washed and sun dried. Double the fermentation, double the fun.
